48/50 Creamless Creamy Squash Soup

Ingredients

1 T olive oil

1 medium onion, chopped

1 celery rib, chopped

1 medium carrot, chopped

½ medium butternut squash, peeled and cut into 1” cubes

1 small sweet potato, peeled and cut into 1” cubes

1 yellow summer squash, halved lengthwise and sliced

2 garlic cloves, minced

2 c water

2 t Vegetarian Better Than Bouillon

1 t Bouquet Garni or herbes de Provence

1/8 t pepper

Directions

1 In a Dutch oven, heat oil over medium heat. Add onions, celery and carrots; cook and stir until onion is tender, 6–8 minutes. Stir in butternut squash, sweet potato and summer squash. Cook and stir until squash and potato are lightly browned, 5–7 minutes. Add garlic; cook 1 minute longer.

2 Add water, bouillon, herbs and pepper; bring to a boil. Reduce heat; simmer uncovered until vegetables are tender 20–25 minutes.

3 Puree; heat through.

My nemesis, the sweet potato, decided to get itself into a squash soup! I didn’t understand this soup recipe with all the browning of the vegetables and addition of the root vegetables. Was it trying to be the sweetest soup ever? I would have to rework the ingredients and method to appreciate it. But for those who like sweet, herby soups, this one is for you! The herbs gave this soup a complex flavor despite the sweetness. I used a dried herb mix called Bouquet Garni. It is a mix of savory, rosemary, thyme, oregano, basil, dill, marjoram, sage, and tarragon. To make this soup more to my liking, I would add more celery, eliminate the carrot and sweet potato, use the full butternut squash and simply saute the onion without browning the onion or butternut squash. If the result of this needed a little more sweetness or body, I would add a little canned pumpkin to keep the soup in the squashy family. Next week brings the last two soups of this series of 50 Soups in 25 Weeks, and I see my nemesis is planning to make a strong finish. I can’t wait!
